At first blush, many an experienced wine drinker might call this Champagne. With a nose that very intentionally marries mineral and unripe fruit notes, the palate continues this savory streak alongside notes of shortbread and green apple. A picture of balance, and a quite nice bottle of bubbly.
Sparkling wine and oysters are a match made in heaven, although this wine may be even better beside either grilled oysters or oysters rockefeller. Enjoy it beside richer appetizers, bready things, or fresh seafood.
