If looking to go truly authentic (and truly delicious) with your pairing here, we would recommend a ragù of wild boar over grilled polenta, although other meats can surely be substituted. We would suggest hand-chopping the ragu for a rustic flair. A classic grilled Steak Florentine with plenty of olive oil and rosemary is another great option, or simply grilled wild mushrooms with goat cheese.
