Renzo Castella works the way his father did, and the way his father's father did in the tiny village of Diano. Well-known for making some of the best Dolcetto in the region, he farms and bottles with the cycles of the moon, and he makes some fabulous stuff. This Dolcetto opens with darker fruits like plums, along with more savory tobacco and earth, while the palate is dense, yet vibrant, with lots of food-friendly acidity.
One of Piedmont's most famous dishes, Taglialine à Ragù, is a perfect match for this wine, but other "meatier" preparations will be great too - a grilled porkchop with an herb salad, or roasted mushrooms over polenta will be quite yummy.
