Coming from the very rare, red-skinned mutation of Xarel·lo, Xarel·lo Vermell, it's a wine that tastes like a white or very light orange wine, but appears like a rosé with a delicate chiffon robe. The nose is very mineral and fresh, with light herbal notes along with strong mineral elements. The palate is brisk and elegant, with almost Chablisien sensibilities - a one-of-a-kind neither-fish-nor-fowl "white."
Pairing Suggestion
The strong mineral elements to this wine make it a perfect match for raw seafood like oysters or clams, although a scallop or salmon ceviche will be excellent matches too. That said, the weight of the wine alos makes it a great match for bright, zesty salads.
