This wine, named for the Greek archetype of the Sage, is made from a variety only really found in the South of Italy, Greco Bianco. Known for producing wines of stony minerality, and what the Italians like to call, "sapidity," or saltiness, the O Sofòs has both of these along with lots of sunny fruitiness. Opening with a nose of some tropical fruit, a bit of white peach, and the same salty mineral element, the palate is full, and deep, with a bright finish.
Pairing Suggestion
An excellent wine to look towards the sea with, this will be superb beside a whole grilled or roasted Branzino with plenty of lemon and herbs, a plate of fire-roasted shrimp with roasted red peppers, or a light vegetable risotto with whatever's in season.
